Slow Cooker Large Pearl Tapioca

 

1 cup large pearl tapioca

4 cups whole milk

2 cups heavy cream

2 egg yolks, slightly beaten

1/3 cup granulated sugar

1/3 cup brown sugar

1/4 tsp. salt

1 vanilla bean, split and seeds removed

Add all ingredients to slow cooker and combine well. Turn on slow cooker to low. Cook on low for about 3 hours or until tapioca are tender, stirring occasionally. Remove the vanilla bean and discard. Allow to cool ; cover top with plastic wrap to prevent skin from forming, refrigerate.
