2 tablespoons minced parsley
2 tablespoon olive oil
garlic powder to taste
1 tsp salt
1/2 tsp pepper
1 butternut squash, peeled and cut into 1 inch cubes
1/3 cup grated parmesan
Preheat oven to 450 degrees. Line a baking pan with foil and spay well will cooking spray.
In a large bowl combine the squash, salt, pepper, olive oil and garlic powder, to taste and toss well to coat. Pour onto prepared baking sheet and spread into a single layer. Sprinkle with the parmesan cheese. Bake for 40-50 minutes or until squash is just tender but crispy on the outside.
