Breakfast Burritos

These freeze perfectly. Great when the morning is too rushed for a good breakfast. Simply remove from the freezer the night before and warm in oven or microwave.

2 pkg. (22 1/2 oz. each) Frozen Hash Brown Patties

15 eggs

2 tablespoon chili powder

2 tablespoon garlic salt

1 tablespoon cumin

1/2 lb. uncooked spicy chorizo

6 jalapeno peppers, seeded and minced

1 large poblano, seeded and diced

1 large sweet red bell pepper, seeded and diced

1 large onion, chopped

1 bunch green onions, chopped

3 cups salsa

1 pkg flour tortillas, for fun experiment with different tortilla flavors. Tomato chili is what’s shown in the picture.

4 cups shredded Pepper Jack Cheese

Cook the hash browns according to package directions; crumble and set aside. Meanwhile in a large bowl, whisk the eggs, chili powder, garlic salt and cumin. Set aside.

In a large pan brown the chorizo, jalapenos, poblano, red bell pepper and onion; drain excess fat. Add the egg mixture to the pan with the chorizo mixture and cook eggs until set. Stir in salsa and crumbled hash browns.

Place the cooked mixture in a tortilla and top with cheese and roll up the burrito.

These freeze beautifully, wrapped in plastic wrap and foil. Place frozen burritos , unwrapped onto a baking sheet. Bake uncovered, at 350 degrees for 50-55 minutes. They can also be warmed in a microwave once thawed in the refrigerator.
