Sopa de Lima with Bat Shaped Chips

2 tablespoons olive oil

2lbs. skinless chicken breasts, cut into cubes

1 onion, chopped

1 poblano, diced

2 cloves garlic, minced

1 qt. chicken stock

1 cup seeded and chopped tomatoes

1 jalapeno, minced

1 tablespoon chili powder

1 tsp. cumin

1 tsp. dried oregano

3 tablespoons lime juice

2 tsp. salt, to taste

1/2 cup cilantro leaves , chopped

1/4 cup, chopped radishes

Lime wedges

Corn tortillas, cut into any shape desired and fried until crisp

Place the chicken in a soup pot with the the olive oil. Saute the cubed chicken until brown. Add the onions and garlic and cook until fragrant. Add chili powder, cumin , oregano, tomatoes, jalapeno and poblano; stir in chicken stock. Bring to boil and reduce to simmer until chicken is cooked through and tender. Stir in lime juice. Combine the radishes and cilantro in a small bowl and toss. Serve topped with radish and cilantro mixture and lime wedge.
