Chewy Oatmeal Cookies made with Quick Cooking Steel Cut Oats, Dark Chocolate Chunks and Chocolate Covered Raisins

Loaded Chewy Oatmeal Cookies

1/2 lb. butter, room temperature

1 1/4 cups packed brown sugar

1/4 cup sugar

2 eggs

1 tsp. vanilla

2 cups flour

4 cups quick cooking steel cut oats

1 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. ground nutmeg

1/2 tsp salt

2 cups chocolate covered raisins

1 cup dark chocolate chunks

Preheat oven to 350 degrees.

Line baking sheets with parchment paper. Cream together sugars and butter. Add eggs one at a time until each is well blended. Add vanilla and combine well. Add the flour , baking soda, salt, oats, cinnamon and nutmeg. Blend well. Stir in Chocolate covered raisins and Dark chocolate chunks.

Using an ice cream scoop, scoop out dough on lined sheets and bake for 12-14 minutes for chewy. If crispy is wanted cook 15-18 minutes
