Snickerdoodles
1 cup shortening
1 1/2 cups plus 2 tablespoons , granulated sugar
2 eggs
2 3/4 cups flour
1 tablespoon cream of tarter
1 tablespoon salt
1 tsp. baking soda
2 tablespoons cinnamon
Preheat oven to 350 degrees.
Combine the 2 tablespoons sugar and cinnamon, set aside.
Combine shortening, sugar and eggs. Stir in flour, salt and cream of tarter. Chill dough for at least 2 hour.
Using a small ice cream scoop, scoop out dough and roll into smooth balls. Roll balls in cinnamon sugar mixture. Place the dough balls 2 inches apart on parchment lined baking sheets. Bake about 10 minute or until just golden brown.
