Layered Taco Salad


2 hearts of romaine , chopped

1 can black beans , rinsed and drained

2 cup fresh and thawed frozen corn

2 cups frozen peas, thawed

1 bunch green onions, sliced

1 pint grape tomatoes, sliced in half

1 cup pepper jack cheese, grated

1 cup sharp cheddar, grated

1 1/2 lb. lean ground beef, cooked until browned and seasoned

seasoning for beef

chili powder, to taste

cumin, to taste

salt and pepper, to taste

dry oregano, to taste

pinch of cayenne

Cilantro , chopped , to taste

Coriander, to taste

Chipotle Cheddar Rice and Adzuki Chips, I bought at COSTCO- Any quality tortilla chip will work

3/4 cup sour cream

3/4 cup salsa verde

2 jalapenos, seeded and minced

Layer salad in this order


black beans




Mixture of the sour cream, salsa verde and jalapenos combined well into a dressing

Seasoned beef

1/2 green onions

grated cheeses

1/2 green onions

Chips, crumbled
