Makes about 6 dozen

Preheat oven to 350 degrees

1 cup butter, softened

1 cup granulated sugar

1 cup packed brown sugar

3 eggs

1/2 tsp vanilla

1/2 tsp. corn syrup

2 tsp. baking soda

1 1/2 cups creamy peanut butter

4 1/2 cups old fashioned oats, not quick cooking

2 cups M&M’s

2 cups chocolate chips

1 cup butterscotch chips

1 1/2 cup peanut butter chips

In a food processor bowl fitted with metal blade, pulse the oats until  mixture is about half smooth with some whole oats still present. Measure to make sure there’s 4 1/2 cups when processed in food processor. If not, add more oats until 4 1/2 cups is reached.

In a bowl of a stand mixer cream butter with the brown and granulated sugar until fluffy. Add eggs one at a time along with vanilla , baking soda , peanut butter and corn syrup.

Add the oats until well combined. Stir in M&M’s , chocolate chips, peanut butter chips, butterscotch chips.

Using a small ice cream scoop that measures about  1 1/2 inches-2 inches scoop out dough onto parchment lined baking sheets 2 inches apart. Bake for 10-12 minutes. Let cool on sheets before removing to rack.

For nut free, Substitute Peanut butter with cream cheese.
