Lemon Chicken

1/4 cup olive oil

3 tablespoons minced garlic

1/3 cup dry white wine

1 tablespoon lemon zest

2 tablespoons lemon juice

1 1/2 tsp. dry oregano

2 stems thyme

Kosher salt and black pepper, to taste

4-6 skinless, boneless chicken breasts

1 lemon

Preheat oven to 400 degrees

Warm the olive oil in a small pan with the garlic, and cook 1 minute. Do not allow garlic to brown. Take off heat and add wine, lemon zest, juice , oregano and 1 tsp salt. Pour into 9×13 baking dish. Place thyme stems on bottom.

Pat the chicken breasts dry and place them in baking dish. Cut lemon in wedges and arrange in dish.

Bake for 30-40 minutes or until chicken is done and top is slightly brown. If chicken is done and tops not as brown, place under broiler for 2 minutes. Cover pan once out of oven and allow chicken to rest 10 minutes. Sprinkle with salt and pepper and garnish with more thyme stems.
