8 cups ,cubed seedless watermelon
1 tablespoon fresh ginger
1 1/2 cup sugar
1 1/2 cup water
Lime juice depending on level of tartness desired
3 cups Club soda, well chilled
In a saucepan make a simple syrup with the sugar and water. Place over medium heat and cook until sugar is dissolved’ set aside to cool.
In a blender, add in batches some of the watermelon and fresh ginger. Process until smooth. Pour mixture into a mesh strainer to separate the juice from the solids. Throw the solids out. Continue to process watermelon and ginger until completed. Pour the strained juice into a large pitcher. Add the cooled simple syrup and enough fresh lime juice as desired. Stir mixture and refrigerate until well chilled. Once chilled, add club soda to mixture and serve.
