White Chocolate- Macadamia Nut- Cardamom Cookies
2 1/2 cups old fashioned oats
2 1/2 cups all purpose flour
2 tablespoons baking powder
1 tablespoon baking soda
1/2 tsp. salt
3/4 tsp. ground cardamom
1 1/2 cups butter , room temperature
1 cup granulated sugar
1 cup packed brown sugar
2 large eggs, room temperature
1 1/2 tsp. pure vanilla extract
2 cups white chocolate chips
2 cups macadamia nuts
Preheat oven to 325 degrees
In food processor, fitted with metal bland, process oats until finely ground. And ground oats, flour, salt , baking powder, baking soda and cardamom to a large bowl and whisk until well combined. Set aside.
In stand mixer bowl cream butter and add sugars until fluffy and well combined. Add eggs one at a time until combined then add vanilla.
Gradually add flour mixture to creamed mixture and blend gently. Do not overwork dough. When all flour mixture is evenly combined, add chocolate chips and nuts. Blend on medium speed until blended.
With an small ice cream scoop, place dough balls on parchment lined baking sheets 2 inches apart. Bake for 12-15 minutes or until just beginning to brown on outside edges. Remove from oven and slide parchment paper with cookies on it onto cooling rack. Makes about 5 dozen.
