Butter Bars

1 lb. butter

1 cup sugar

pinch of salt

seeds scraped from 1 vanilla bean pod

1 tsp. vanilla

4 cups flour

Cream butter and sugar, then add salt and vanilla extract and seeds. Work in the flour. The batter will be stiff. Pat into 9×13 pan lined with parchment paper.

Bake at 325 degrees for 30-40 minutes. Serve as is or frost.

Frosting

1/3 cup butter, softened

3 cups powdered sugar

1 1/2 tsp vanilla

3 tablespoon milk

Combine all ingredients. Beat until smooth and fluffy. Tint with desired food coloring. Add more milk if needed.

  2. Since I’m a bit of a nomad, I don’t always have access to things like vanilla pods. How much vanilla extract would you say is equal to the seeds you used here? Thanks xx
