Spiced Apple Cake with Dulce De Leche Frosting



2 eggs

1 cup vegetable oil

1/4 cup fresh orange juice

2 cups sugar

2 cups flour

4 tsp. ground cinnamon

1 tsp. salt

2 tsp. baking soda

4 cups peeled, cored and chopped Granny Smith apples

1 tsp. vanilla

1 cup, chopped, toasted walnuts

Preheat oven to 325. Butter and flour 10 inch cake pan.

To make cake, beat eggs at medium speed until frothy. Add the oil and orange juice and mix thoroughly. In separate bowl, combine dry ingredients. Add dry mixture to egg mixture. Stir in apples and nuts.

Pour into pan. Bake until firm to touch and clean toothpick inserted into center of cake comes out clean, about 1 1/2 hours. If top begins to brown too much, cover with foil. When done, remove from oven and place on wire rack to cool about 10 minutes. Turn out of pans and cool completely.

Dulce De Leche Frosting

1/2 can Dulce De Leche

4 oz. Cream Cheese

2 Tablespoon butter

4-5 cup powdered sugar

Blend all ingredients until well combined. Add sugar as needed for spreading consistency.
