6oz. fresh raspberries
6oz. fresh blackberries
6 oz. fresh blueberries
6 oz. fresh strawberries,sliced
1 cup sugar plus 3 tablespoons
1 tablespoon lemon juice
1 tablespoon framboise or orange liqueur
1 1/2 cups heavy cream
1 tsp. vanilla
about 3-4 meringue shells, broken into pieces
1 cup chopped pistachios
Place 1/4 of each type of berries in a pan with 1 cup of sugar and lemon juice. Using a potato masher or fork lightly mash the berries in the pan. Bring the mixture to a boil, lower heat and continue to cook until mixture is syrupy; remove from heat. Fold in the remaining fresh berries and the liqueur; refrigerate until well chilled.
Whip the heavy cream with remaining sugar and vanilla until firm peak form.
In 6-8 pretty glasses, divide evenly a layer of fruit with whipped cream, pistachios and a sprinkling of meringue pieces until glasses are full. End with whipped cream and garnish with a few berries and a sprinkling of pistachios.
