Banana Cake with Goat Cheese Frosting

3 very ripe bananas , mashed

3/4 cup sugar

1/2 cup brown sugar

1/2 cup vegetable oil

2 extra large eggs, room temperature

1/2 cup sour cream

1 teaspoon pure vanilla extract

zest from one large orange

2 cups flour

1 teaspoon baking soda

1/2 kosher salt

1/2 cup toasted , chopped walnuts

Preheat oven to 350 degrees. Grease and flour 9×2 inch round cake pan.

In a bowl of electric mixer fitted with paddle attachment , mix bananas, sugars on low speed until combined.

With the mixer on low, add oil, eggs, sour cream, vanilla, and zest. Mix until smooth.

In a separate bowl, sift together dry ingredients. With mixer on low, add dry ingredients and mix

just until combined. Stir in nuts. Pour batter into prepared pan and bake for 45-50 minutes or until a toothpick comes out clean. Cool in pan for 15 minutes, turn out on cooling rack, cool completely.

Goat Cheese Frosting

12 oz. fresh goat cheese, room temp.

6 oz, whipped cream cheese, room temp.

1 cup powdered sugar

In a stand mixer beat cheeses for 5 minutes to create fluffy texture. Add powdered sugar and mix well for 4 minutes.

Frost the top of  banana cake and garnish with toasted walnuts.

Cardamom-Banana Cake with Banana-Caramel Buttercream Frosting

Cake:

1 cup butter, melted

2 eggs

3 cups mashed ripe bananas

1 tsp. vanilla

3 cup flour

1 cup granulated sugar

1/2 cup packed brown sugar

2 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1 tsp. cardamom

Buttercream:

1/2 cup butter

1 mashed ripe banana

1/4 tsp. salt

1 1/2 tsp. vanilla

8 oz. caramels

1 tablespoon cream

about 6 cups powdered sugar

Cake:

Preheat oven to 350 degrees. Grease, flour and line 9×2 inch cake pans with parchment paper. Set aside.

In a medium bowl , combine the butter, eggs, bananas and vanilla. In a separate bowl whisk together the flour, sugars, baking powder, baking soda, cardamom and salt. Combine the wet ingredients with the dry ingredients , mixing just until incorporated. Divide batter into prepared pans and bake for about 35 minutes or until a toothpick comes out clean when inserted into the center. Cool cakes in pans completely and turn out onto rack, set aside.

Buttercream:

In a small saucepan over low heat melt the caramels and 1 tablespoon of cream, set aside. In the bowl of a mixer add the banana, vanilla, salt, butter, vanilla and melted caramel, mix until combined. Add enough sifted powdered sugar to bring mixture to a spreading consistency.
