Spinach, Bacon and Tomato Sauce
1lb.Black Pepper Bacon, Diced
1 onion, diced
2 cloves garlic, minced
1-2 tsp red pepper flakes
1 1/2 tsp. dried Basil, even better with fresh basil
5 oz. baby spinach
2 15 oz.cans fire roasted, diced tomatoes
Saute bacon until just crisp, add onion and cook until translucent. Remove bacon and onion with slotted spoon and set aside. Pour out the bacon fat. Return bacon, onion, garlic, basil ,red pepper flakes, tomatoes and spinach; saute until spinach is just wilted.
Pour over and toss with pasta of your choice; sprinkle with parmesan cheese.
Sounds yummy. About how much pasta did you use in the batch pictured? It looks like about the right sauce-to-pasta ratio…..

I don’t eat meat (I guess you could call me a pescetarian!) but this looks like a really tasty sauce for pasta, minus the bacon. 🙂
It would be good without and add roasted garlic rather than fresh for the smoky flavor the bacon added:)
I’d add a full head of roasted garlic:)
Tasty! Thanks for the tip. I love roasted garlic — I sometimes roast a whole head with herbs in the oven and then serve it with a soft cheese as an appetizer. You need strong mouthrinse after (to avoid garlic breath!) but the taste of the garlic is worth it.
Me too! I like to roast a bunch at one time and freeze them so that I always have it ready.
