Parisian Waffle Cookies
Cookie:
- 1 cup plus 1 1/2 tablespoons butter
- 2 1/4 cup flour
- 5 tablespoons water
Fillings:
- Filling #1:
- 8 oz. cream cheese, room temperature
- 1/3 cup plus 1 tablespoon sugar
- 1/2 tsp. lemon extract
- zest from 1 lemon
- 1/4 tsp. vanilla
- Filling #2:
- 1/2 cup butter
- 1/2 cup powdered sugar
- 2 egg yolks
- 1 tsp. vanilla

Cookie:

Preheat oven to 350 degrees.

Work together the cookie ingredients. Wrap in plastic wrap and refrigerate 1-2 hours.

Roll out to 1/8 inch thickness. Using an oval shaped cookie cutter cut out cookies, set aside. Place granulated sugar into a rimmed baking sheet. With a waffle surfaced rolling pin, roll both sides of the cookies in the sugar. Place sugar rolled cookies on a parchment lined baking sheet. Bake for 8-12 minutes just until cookies begin to turn golden on the edges. Remove from oven and allow to cool completely. Meanwhile make the desired fillings.

Fillings #1 and #2:

Combine all ingredients and beat until smooth. Spread on one side of cookie and sandwich with another.

Keep refrigerator if not served right away.
