Bierocks
Dough:
1 pkg. yeast
1 cup mashed potatoes, unseasoned
1 1/2 cups potato water
2/3 cup sugar
1 tsp. salt
7-7 1/2 c. flour
2 eggs , beaten
2/3 cup butter, melted
Filling:
1/4 cup butter
1 cup sliced onions
2 cloves garlic, minced
4 cups shredded cabbage
2 cups ground beef
salt and pepper to taste
Dill weed to taste
Dough: Put yeast into bowl and add lukewarm potato water and mashed potatoes. Add sugar and salt; stir. Let stand until thoroughly dissolved, about 5 minutes. Add eggs and mix. Add about half the flour; beat until smooth. Beat in butter. Add most remaining flour; knead. Cover and let stand 10 minutes. Put into large greased bowl; let rise in refrigerator until ready to use.
Filling: Brown hamburger, add onions, garlicΒ and butter. Saute’ until onions are tender, add dill , salt and pepper to taste. Add shredded cabbage and steam until tender. Remove from heat and set aside to cool.
Roll dough 1/2 inch thick: cut into 5 inch squares. Place heaping tablespoon full of filling into center of dough square. Bring up corners and seal together. Place on parchment lined baking sheets, brush tops lightly with water and sprinkle with dry dill weed.
Bake in 350 degree oven until golden brown about 20 minutes.
